Heat the milk and heavy whipping cream in a saucepan over medium-high heat until it begins to simmer and foam.2. Meanwhile, in a mixing bowl, whisk together the egg yolks and sugar using a whisk or hand mixer. Continue whisking/mixing until the mixture is smooth and ribbon-like.3. Once the milk begins to simmer, remove it from the heat. Slowly pour half of it into the egg mixture while whisking rapidly. Working quickly, transfer the egg mixture into the saucepan, pouring in a slow stream and whisking rapidly until everything is combined. It is important to work quickly here so that the egg doesn't cook and create little chunks of cooked egg.4. Heat over medium heat and whisk in the pistachio nut paste. Continue heating until the mixture starts to thicken.5/ Remove from heat and pour the mixture into a sturdy, freezer-safe pan, like a bread pan. Place in freezer for 30 minutes.6. Because we are doing this by hand rather than an ice cream maker, it is important to churn the gelato by hand as it freezes in order to break up the ice crystals and create a smooth texture. Whisk (or use a hand mixer) on the gelato every 30-45 minutes until it reaches the texture of frozen yogurt, then simply leave it in the freezer until ready to eat. This should take 3 to 4 hours, or about 6 "churnings."7. Let sit for 5-10 minutes on the counter to soften before serving. Sprinkle pistachio nuts over the gelato if desired.Thanks for watching! for the people who are commenting gelato and ice cream are the same, people usually use gelato to refer to ice cream made in a specific way, it does taste different. it translates to ice cream and technically is a type of ice cream, though I guess ice milk I think it shouldn't contain cream, anyways you get the point. also, is pistachio pronounced pist-aa ah-chio

This isn't legitimate Gelato - Traditional Gelato does NOT have Egg's or Cream in it. It is made with WHOLE Milk so the milkfat is roughly 3.8%. This is more Frozen-Yogurt and not Gelato.

Personally, I prefer the ghetto method. Buy cool whip, place cool whip in the freezer, buy your second ingredient. Personally I love pecan pie but fruits work really well too. Take spoonful of lightly frozen cool whip and place in bowl. Take second ingredient and place on top. Fold the cool whip over a time or 2 a voila! Homemade ghetto gelato

Whether or not there is egg in gelato depends on the region of Italy, as does the amount/presence of cream or milk. Much like whether or not eggs or cornstarch are used in ice cream here in the US. That also varies wildly by region. In short, yes, gelato can contain eggs.
